Services in the Rite of Christian Burial will be conducted on April 19, 2022, for Janith Anne Couvillion Frederick, at 11 am at the Minor Basilica of the Immaculate Conception with Rev. Blake Deshautelle celebrating. Interment will be held at the American Cemetery under the direction of Blanchard-St. Denis Funeral Home A native of Baton Rouge, Mrs. Frederick died Friday, April 15, at her residence in Natchitoches. The daughter of Alfred Foster Couvillion and Thelma Chidester Couvillion and the twin sister of Judith Anne, she lived in Simmesport the majority of her childhood. She graduated from Simmesport High School and attended Louisiana State University for two years before moving to Natchitoches to complete the Bachelor of Science degree in Home Economics from Northwestern State University. She met her husband, John Levy Frederick, on a blind date, and married eight months months later in Simmesport at Christ the King Catholic Church. They enjoyed a 39-year marriage where they were lifetime co-owners of Kaffie-Frederick Inc. Mrs. Frederick taught nutrition and diet therapy for over 30 years at Natchitoches Trade School and Northwestern State University, and she also was a long-term substitute teacher in several Natchitoches Parish schools. She was a part-time caterer, and she owned and operated Tours by Jan while hosting hundreds of guests in their bed and breakfast, Chaplin House, where they lived from 1995 until 2012. She was a member and board member of several organizations, including Service League of Natchitoches, Beta Sigma Phi, Natchitoches Parish Tourist Commission, Natchitoches Parish Library, and Natchitoches/Northwestern Symphony Society. She hosted dozens of trips abroad for high school students for over 30 years and opened their home to Louisiana School students as a host family during the School’s early years. She was an active member of the Minor Basilica. Mrs. Frederick is predeceased by her parents and her husband. She leaves her sons, Alfred Luke Frederick and his wife, Lori; and Andrew Sydney Frederick; her grandson, Jonathan Luke Frederick; her sisters, Judith Couvillion Piker of Baton Rouge; and Jacquelyn Couvillion Morrow of Mandeville; and several nieces and nephews.
